A Paloma Cocktail is like a margarita. This paloma has a citrus twist by using grapefruit juice instead of the traditional lemon-lime. It’s refreshing with the right balance of sweet and tart.
For those of you who watch “The Barefoot Contessa”, you know how much Ina adores her husband. I adore mine, too. In many of her episodes, she greets Jeffrey with a cocktail. He always remarks that “something smells good” in the kitchen. Here was my chance! I was inspired to make Ina’s version of Margaritas with Texas Ruby Red Grapefruits– better known as a “Paloma”. I needed 1 cup of freshly squeezed grapefruit juice….
…the juice of four limes. I also needed 1 cup of white tequila and 1 cup of triple sec. We usually like our margaritas on-the-rocks. This time, I decided to dig out the blender and make them slushy. I set the juice into the fridge and waited for Jeffrey Craig to arrive home…
“Hi, honey!” Craig was surprised to see his wife so energetic. He set his things down and I got busy making our cocktails. Now, to rub a little fresh lime around the rim of a glass… dip the glass around some coarse salt and set those aside to dry. Add the juices and lots of ice and puree it in the blender.
TASTING NOTES: “Thank God It’s Friday”! It’s a nice cocktail, but it needed a little bit more of something. (The grapefruits weren’t as sweet as I expected.) I added a couple Tablespoons of sugar (simple syrup would work well, too) extra ice and it was perfect. This makes 8 servings. I froze half of this. The next day, it was added to a blender with some ice and it was just as good!
Pink Grapefruit Margarita

Ingredients
- 1 lime cut in wedges, optional
- Kosher salt optional
- 1 cup ruby red grapefruit juice
- 1/2 cup freshly squeezed lime juice 4 limes
- 1 cup orange liqueur such a Triple Sec
- 1 cup white tequila
- 2 tablespoons sugar to taste (optional) **see note**
Instructions
- If you like a salt rim on the glasses, rub the lime around the edge of the glass and then dip the rim of each glass lightly in a plate of kosher salt. Set aside to dry.
- Combine the grapefruit juice, lime juice, orange liqueur, and ice in a blender and puree until smooth. Pour into a large pitcher and stir in the tequila. If you're not serving the margaritas in salted glasses, stir 1/4 teaspoon of salt into the pitcher of margaritas. Believe me, it will make a difference!
- Serve ice cold.

Sorry to hear about your job loss, but it sounds like your new one might be a bit less stressful..lol. Wow! Teenagers..I have two..pretty challenging at times.
