How to Make Homemade Aloha Rocky Road Chocolate Candy
Homemade Rocky Road Candy is so simple to make. The beauty of this chocolate candy recipe, is that it's so versatile. My version is made with Belgian milk chocolate, macadamia nuts and plenty of marshmallow. Feel free to switch things up with dark chocolate, peanuts or pecans-- but don't leave out the marshmallows!

Equipment
1 Baking Sheet wax paper, parchment paper or a silicone baking sheet
double boiler OR
large microwave proof bowl with a handle, is ideal
Ingredients
1poundchocolatedark or milk chocolate, coarsely chopped OR
2cupschocolate chipsmilk or dark; see notes
2cupssmall marshmallows
¾cupMacadamia nutsor nuts of your choice;
Instructions
For a double boiler:
Fill the bottom pot with just enough water that it doesn't touch the bottom of a glass bowl. Bring the water to a gentle simmer.Add the chocolate, and begin to stir once the chocolate begins to melt.
For a microwave:
Add the chopped chocolate to a microwave safe bowl. Melt in 30-second increments, stirring each time, until completely melted.If using chocolate chips: Add 1 Tablespoon oil to the chips, and melt and stir in 30-second intervals
Add ingredients:
Allow the chocolate to cool, slightly. Add the marshmallows and nuts of your choice, gently mixing together.
Spread on a prepared baking sheet in clusters (or one layer, to break up once firm).
