Homemade Rocky Road Candy is so simple to make. This version is made with Belgian milk chocolate, macadamia nuts and plenty of marshmallow. The beauty of this chocolate candy recipe, is that it’s so versatile. Feel free to switch things up with dark chocolate, peanuts or pecans– but don’t leave out the marshmallows!
Valentine’s Day is definitely a great excuse to buy (or receive) chocolate. In many of my lemon desserts, I mention that “lemon is my chocolate”. That doesn’t mean to say that I don’t like chocolate. I do!
When chocolate is combined with marshmallows, my taste buds are definitely “team chocolate”. Add macadamia nuts to the mix, and I’m sold! There’s a local candy business that makes a Rocky Road confection with the three ingredients that I’ve mentioned. I got to thinking… can I make it any cheaper and just as good? The answer is YES!
Chocolate chips are fine to use. Using quality chocolate, is my personal recommendation, though. We are fortunate to have two Trader Joe’s stores in our area. I stock up on their chocolate bars because they are reasonably priced. Best of all, the chocolate is excellent quality. I’ve used it to make homemade caramels, with great success.
Simply chop up dark or milk chocolate. A double boiler method works fine. Must make sure that the water is simmering, and doesn’t touch the bottom of the bowl. Otherwise, microwave in 30-second intervals, stirring as the chocolate begins to melt. Once the chocolate is completely melted, add the marshmallows and nuts. NOTE: I made my own marshmallows, but store bought ones are fine.
One a baking sheet lined with either parchment/wax paper, or a silicone baking mat. You can either drop the candy in clusters, or spread everything in one layer and break them up into pieces.
Set the candy into the refrigerator, to completely cool. That’s it! Enjoy every single chocolatey, nutty and chewy bite!
TASTING NOTES: What I love about Rocky Road Candy is the combination of sweet, salty and chewy. Quality chocolate really makes the biggest difference in the quality of homemade candy. I’ve never tried melting chocolate in a slow cooker, but I’m sure that would work too. The Macadamia Nuts definitely bring out the “Aloha” in this Rocky Road Candy.
How to Make Homemade Aloha Rocky Road Chocolate Candy
Equipment
- 1 Baking Sheet wax paper, parchment paper or a silicone baking sheet
- double boiler OR
- large microwave proof bowl with a handle, is ideal
Ingredients
- 1 pound chocolate dark or milk chocolate, coarsely chopped OR
- 2 cups chocolate chips milk or dark; see notes
- 2 cups small marshmallows
- ¾ cup Macadamia nuts or nuts of your choice;
Instructions
For a double boiler:
- Fill the bottom pot with just enough water that it doesn't touch the bottom of a glass bowl. Bring the water to a gentle simmer.Add the chocolate, and begin to stir once the chocolate begins to melt.
For a microwave:
- Add the chopped chocolate to a microwave safe bowl. Melt in 30-second increments, stirring each time, until completely melted.If using chocolate chips: Add 1 Tablespoon oil to the chips, and melt and stir in 30-second intervals
Add ingredients:
- Allow the chocolate to cool, slightly. Add the marshmallows and nuts of your choice, gently mixing together.
- Spread on a prepared baking sheet in clusters (or one layer, to break up once firm).
- Set into the refrigerator until firmly set.
- Store in an air tight container.

I’m not one to eat a lot of salt, but I have no doubt that a sprinkle on top would be extra delicious.
