The Round Table Maui Zaui pizza features tender ham, crisp bacon, juicy pineapple, tomatoes, red onions, and green onions, with a Polynesian sauce. At last, I believe I have replicated the pizza recipe to be spot on!


It has been many years since we’ve ordered takeout pizza. Truth! Pizza dough is so easy to make and I have several variations on my blog. In fact, it was a few years ago that my husband ordered their Maui Zaui Pizza and he hasn’t stopped longing for another one. He loves that pizza!
I promise you that homemade pizza dough is so easy to make! I’ve made it in a stand mixer, and I’ve also made it in a food processor. Before I retired, I used to pick up pre-made pizza dough at Trader Joe’s and that was also a great substitute.

This New York Style Pizza Dough was a dream to make and to shape. I like to make pizza dough up to a few days before, then store it in an air tight container.
The Polynesian sauce is the star of the Maui Zaui Pizza. There’s pineapple juice, brown sugar, garlic, and a few other ingredients. I made the sauce a day ahead, and stored it in a glass mason jar. Let’s make pizza!

One of my favorite kitchen tools that I use a LOT is this vegetable chopper. I’ve got pretty good knife skills, but this chopper cuts my vegetable into perfect and uniform sizes in one fell swoop. Bam!

I have shredded both Provolone and Mozzarella cheese (I don’t recommend using pre-shredded cheese, as you won’t get as much “melt”). The pizza dough recipe (included at the end of this post) makes two pizzas.

Add a generous layer of sauce, a layer of cheeses and then the toppings.

There are different ways to transport and bake a pizza. I’ve used our oven for years and that works quite well. If you have a pizza peel, I recommend adding a generous layer of Semolina flour so that the pizza doesn’t stick. Otherwise, parchment paper works well in an oven. A baking steel of baking stone helps to avoid a soggy crust.

We recently invested in a Ninja Artisan Outdoor Pizza Oven— and we love it! It’s electric and costs about half of the other high-end gas pizza ovens. After trial and error, we found the ideal way to prepare a pizza and to slide it into the pizza oven takes two steps. I prepare the pizza on a sliding pizza peel that I bought years ago. The one that I have is no longer made, but I’ve linked a newer one that I’d recommend. Once the pizza is ready to go into the oven, it’s slid onto the Ninja Pizza Peel that is generously coated with semolina flour. With a firm push, the pizza goes right onto the preheated stone. What we love about this oven is that it can heat up to 700F. Plus, we don’t heat up the house when it’s a hot summer day.

12 minutes later, we have a Homemade Maui Zaui Pizza. Look at all that melted cheese!

TASTING NOTES: We loved this pizza crust. The Polynesian sauce is different in a good way. Our Outdoor Pizza Oven was a great investment, and we’ve used it quite a few times since purchasing it in July of this year. My husband was so happy and he agreed that my recipe tasted exactly like the Round Table version that costs an average of $35.00. I made ours for a lot less!
Maui Zaui Pizza Recipe Copycat
Equipment
- Ninja Pizza Oven Our recent investment that we really love!
Ingredients
- 1 pizza crust -Or-
Homemade Pizza Dough Recipe (optional)
- 3 1/2 cups bread flour 570g
- 2 tsp active dry yeast or Instant Yeast
- 1 Tablespoon plus 1/2 tsp salt 12g
- 1 1/2 cups warm water 100F – 109F (370ml)
Pizza toppings:
- 1/2 cup mozzarella cheese shredded
- 1/2 cup provolone cheese shredded
- 2 -3 Roma tomatoes Sliced and minced
- 1/4 cup red onion chopped
- 3 pineapple rings sliced (fresh pineapple is even better)
- 4 -5 slices Canadian bacon cut into quarters
- 3 slices cooked bacon crumbled
- 2 teaspoons olive oil for light brushing
- 2 green onions chopped
For the Polynesian Sauce (can be made up to a few days in advance):
- 1 tablespoon orange juice
- 1 clove garlic minced
- 1/2 teaspoon olive oil
- 1/8 teaspoon ground ginger I used frozen Trader Joe's minced ginger
- 1 tablespoon brown sugar
- 2 tablespoons pineapple juice
- 1 tablespoon chili sauce sweet
- salt dash
- 1 tablespoon cornstarch
Instructions
Homemade Pizza dough instructions:
- In a stand mixer fitted with the dough hook attachment, add all ingredients except water and mix to combine.
- Add the water and mix on medium speed for 5 minutes. The dough should be tacky and spring back when touched.
- Transfer the dough to an oiled bowl, cover and allow to proof for about 45 minutes.
- When ready to prepare the pizza, divide in half and shape.
- NOTE: The dough can be prepared up to 2 days in advance. Once proofed shape into a round ball and store in an air-tight container.
For the Polynesian sauce:
- In a saucepan, bring all of the ingredients to a simmer– EXCEPT for the corn starch. Gently simmer for 5 minutes. Whisk HALF of the cornstarch until any lumps are smoothed out. If the sauce isn't thick enough to be a spreadable consistency, add the remaining half of the cornstarch. The sauce can be made several days in advance, and stored in an air tight container in the refrigerator.
For the toppings:
- Add the vegetables into a bowl and add 2 Tsp vegetable or olive oil. Coat the vegetables evenly.
To assemble the pizza:
- Form the pizza balls into a 9" or 12" shape. Brush the dough with an even layer of the sauce.
- Add the toppings and cheese. Bake at 450℉ for 10-15 minutes or until desired "doneness". Garnish with the green onion.
