This recipe reminds me of the cheesy garlic bread that was once served at a local restaurant. Quite simply, French bread is bathed in a butter and garlic bath. A cheesy topping made of mayonnaise, cheese and green onion is layered on top and then baked until gooey and cheesy. Sublime!
This is one of my earliest posts, from my old point-and-shoot camera, so I apologize for the lackluster quality of photos. However, I can personally attest that this is one of the best garlic cheese breads that you will ever make. I need to shoot some new photographs, but please… trust me….it’s decadent, loaded with calories, and absolutely delicious!
There comes a time when a commitment to only eat “healthy” gets blown right out of the water. If you love garlic bread (and it’s one of my weaknesses), this is the recipe for you. Do NOT– I repeat– NOT use margarine, garlic powder or Miracle Whip! Go for the real stuff.
I used my trusty cast iron skillet where I heated my butter and chopped fresh garlic:
Arrange sliced french bread rolls and let all that garlic infused butter soak right up…
While the remaining rolls are soaking in the butter Jacuzzi, cover the butter soaked rolls with the spread made of a Mexican Blend Cheese, Mayonnaise, chopped scallions, and Parmesan.
Just look at all that butter– are you drooling yet?
Bake those puppies for about 10 minutes and then broil them for a minute– maybe two, but stay very close to the broiler!
I served this with soup for a fast week night meal. OMG! This is a sinfully great recipe.
TASTING NOTES: Are you brave enough to make this? I’ve made this recipe numerous times, and sometimes I leave out the cheesy topping. Either way, I gave rave reviews. By the way, I’ve made this bread without the cheesy topping, and it’s still the best garlic bread. As just plain garlic bread, without the cheese, this freezes well, wrapped in foil. I bake it, still frozen, and it’s perfect.
The Best Cheesy Garlic Bread
Ingredients
- 3-1/2 cups Cheddar Cheese Grated
- 3/4 cups Monterey Jack Cheese Grated
- 1/2 cup Parmesan Cheese Grated
- 1/2 cup Mayonnaise
- 4 whole Green Onions White And Light Green Parts Minced
- 1 loaf Crusty French Bread
- 1 stick Butter
- 4 cloves Garlic Finely Minced
Instructions
- Mix cheeses with the mayonnaise and the green onions. Add dash of salt to taste and set aside or keep in fridge until you need it.
- Cut loaf of bread in half, then each half into half again.
- Melt the butter in a large skillet; add the minced garlic and allow to steep on low heat.
- Dip 1/4 of the loaf of French bread until evenly saturated with garlic butter. Repeat with the remaning quarters.
- Spread cheese mixture on warm loaves and bake in a 425 degree oven until cheese is hot and bubbly, about 10 minutes.
- Slice and serve.

Can you make these ahead and then bake right before eating?

I make the garlic bread part, cut the loaf into quarters. I wrap each chunk with plastic wrap and then with foil and freeze it. Can you add the mayonnaise/cheese combo and freeze. I can’t vouch for that. Personally, I’d add that cheesy topping at the time I’m going to bake the bread. I’m unsure how well mayonnaise freezes.
