This recipe reminds me of the cheesy garlic bread that was once served at a local restaurant. Quite simply, French bread is bathed in a butter and garlic bath. A cheesy topping made of mayonnaise, cheese and green onion is layered on top and then baked until gooey and cheesy. Sublime!

3-1/2cupsCheddar CheeseGrated
3/4cupsMonterey Jack CheeseGrated
1/2cupParmesan CheeseGrated
1/2cupMayonnaise
4whole Green OnionsWhite And Light Green Parts Minced
1loaf Crusty French Bread
1stick Butter
4clovesGarlicFinely Minced
Instructions
Mix cheeses with the mayonnaise and the green onions. Add dash of salt to taste and set aside or keep in fridge until you need it.
Cut loaf of bread in half, then each half into half again.
Melt the butter in a large skillet; add the minced garlic and allow to steep on low heat.
Dip 1/4 of the loaf of French bread until evenly saturated with garlic butter. Repeat with the remaning quarters.
Spread cheese mixture on warm loaves and bake in a 425 degree oven until cheese is hot and bubbly, about 10 minutes.
Slice and serve.
Notes
Sometimes, I skip adding the cheese mixture and serve this as regular Garlic Bread. I freeze a quarter chunk at a time, by wrapping in in foil and then into a ziploc bag. I reheat a frozen loaf at 350F for about 15 minutes, then unwrap and bake 5 more minutes, until golden brown.Recipe adapted from The Pioneer Woman
