Boursin Cheese Roasted Tomato Bruschetta

This Boursin Cheese Roasted Tomato Buschetta appetizer features slices of a baguette, toasted with a little olive oil, then slathered with creamy Garlic with Fine Herbs cheese spread. Cherry Tomatoes are roasted with sliced garlic until they are soft and super sweet. A drizzle of balsamic glaze is a final flourish. These appetizers disappeared in minutes, among our guests.

Equipment

  • oven-proof skillet or dish

Ingredients

  • 2 pints cherry tomatoes or grape tomatoes
  • olive oil enough to lightly coat the tomatoes
  • salt and pepper
  • 2 small garlic cloves thinly sliced
  • 1 baguette sliced ¼" thick
  • olive oil enough to brush over each baguette slice
  • Boursin Cheese Garlic & Herbs
  • Balsamic Glaze

Instructions

  • Grill or broil the prepared baguette slices on each side. Set aside.
  • Add a thin layer of Boursin cheese to each baguette slice.

For the Bruschetta:

  • Preheat the oven to 425F
  • In an oven proof skillet (or pan) drizzle the tomatoes with olive oil, season with salt and pepper and add the garlic slices. Gently toss to coat the tomatoes and garlic slices.
  • Roast about 20 minutes, or until the tomatoes have released their juices. Remove into a bowl, and set aside.
  • Using a slotted spoon, place a neat pile of the tomato mixture onto each baguette slice.
  • Drizzle the Balsamic Glaze on top.
  • Optional: Garnish with fresh basil, if desired.
  • Any leftover tomato mixture tastes delicious over cooked pasta or on scrambled eggs.

Notes

Measurements are all approximate and can easily be increased for more servings.  It's all about not adding too much oil and seasoning with salt, to taste.
