This Boursin Cheese Roasted Tomato Bruschetta appetizer features slices of a baguette, toasted with a little olive oil, then slathered with creamy Garlic with Fine Herbs cheese spread. Cherry Tomatoes are roasted with sliced garlic until they are soft and super sweet. A drizzle of balsamic glaze is a final flourish. These appetizers disappeared in minutes, among our guests.
Bruschetta is one of my favorite Italian appetizers. Fresh tomatoes, marinated in olive oil, garlic, Parmesan Cheese and basil, served on a bite-sized garlic grilled baguette– so delicious! I was inspired to make a different version of bruschetta by roasting cherry tomatoes with sliced garlic! Wow!
I got the idea of slathering Boursin cheese spread as a substitute for a goat cheese version that my friend ordered at a restaurant. (I admit, I just cannot train my palate to like the strong gamey flavor of goat cheese.)
Boursin Gournay Cheese is a delicious substitute, and it’s so versatile.
My husband does a great job planting a variety of small tomatoes– including cherry tomatoes. This year, we had a bumper crop of sweet and juicy tomatoes. We’ve been picking and eating them as fast as we can! Paella was on our dinner party menu. Bruschetta would be a great way to use up our many cherry tomatoes.
Have you ever tried roasting tomatoes? Something magical happens to the flavor– the tomatoes taste sweeter! A recipe for Bruschetta isn’t really necessary, because it’s so simple to make. Simply drizzle (don’t drown) the tomatoes with just enough olive oil to coat the tomatoes. Season with a little salt and pepper. Two cloves of thinly sliced garlic gives great flavor, and tempers the flavor to taste milder.
Slice a baguette, and brush a thin layer of olive oil and toast them. (This can be done in the oven, or on a grill.) Traditionally, rubbing a clove of garlic adds flavor to the Bruschetta. This time, I skipped the extra garlic, since the Boursin Cheese has garlic in it.
Another traditional garnish for Bruschetta is fresh basil. I thought about it, but decided that the herbs in the Boursin cheese would be enough.
For a final flourish, a drizzle of Balsamic Glaze was the final layer of flavor. I had to take a taste, before my guests arrived
TASTING NOTES: Wow! Roasted tomatoes are so incredibly delicious. The roasted garlic was mild in flavor. The creaminess of the Boursin cheese was a perfect substitute to Parmesan. Our guests were raving about how good these were. They disappeared before I could get my fair share. That’s okay. We have plenty more tomatoes left. Cherry tomatoes can be found year-round at most of our grocery stores.
Boursin Cheese Roasted Tomato Bruschetta
Equipment
- oven-proof skillet or dish
Ingredients
- 2 pints cherry tomatoes or grape tomatoes
- olive oil enough to lightly coat the tomatoes
- salt and pepper
- 2 small garlic cloves thinly sliced
- 1 baguette sliced ¼" thick
- olive oil enough to brush over each baguette slice
- Boursin Cheese Garlic & Herbs
- Balsamic Glaze
Instructions
- Grill or broil the prepared baguette slices on each side. Set aside.
- Add a thin layer of Boursin cheese to each baguette slice.
For the Bruschetta:
- Preheat the oven to 425F
- In an oven proof skillet (or pan) drizzle the tomatoes with olive oil, season with salt and pepper and add the garlic slices. Gently toss to coat the tomatoes and garlic slices.
- Roast about 20 minutes, or until the tomatoes have released their juices. Remove into a bowl, and set aside.
- Using a slotted spoon, place a neat pile of the tomato mixture onto each baguette slice.
- Drizzle the Balsamic Glaze on top.
- Optional: Garnish with fresh basil, if desired.
- Any leftover tomato mixture tastes delicious over cooked pasta or on scrambled eggs.
