Lobster Tails, around Valentine's Day or New Year's, can usually be found on sale for reasonable prices. I bought two 5 oz. Lobster Tails, and these took about 15 minutes to make (served with Filet Mignon, of course). It's so simple. "Top and Tail" at home is much less expensive, and makes for an elegant dinner.

Ingredients
2whole lobster tails
1/2cupbuttermelted
1/2teaspoonground paprika
salt to taste
ground white pepperNOTE: I used Old Bay Seasoning instead of paprika salt and pepper
1lemon - cut into wedgesfor garnish
Instructions
Preheat the broiler, with the rack second down from the very top.
Place lobster tails on a baking sheet. With a sharp knife or kitchen shears, carefully cut top side of lobster shells lengthwise. Pull apart shells slightly. Gently reach under the meat and pull it up so it's laying on top of the shell.
Season the meat with equal amounts butter, paprika, salt, and white pepper, or Old Bay Seasoning (my preferred seasoning)
Broil lobster tails until lightly browned and lobster meat is opaque, about 5 to 10 minutes.
NOTE: I found that the lobster tails took closer to 10 minutes. Halfway through the broiling process, I moved the rack up one more level, but watched it very closely so that it wouldn't burn or overcook.
Garnish with lemon wedges, and additional butter, to serve.
