Strawberry Spinach Salad with a Balsamic Poppyseed Vinaigrette Dressing

Fresh strawberries and fresh spinach are a beautiful pairing for a salad. This homemade balsamic vinaigrette, with poppy seed, is the perfect balance of a little sweet and a little tart, and just a hint of garlic.

Ingredients

For the salad:

  • 6 cups Baby spinach 1 cup per serving
  • 2 pints Fresh Strawberries sliced
  • ½ cup Gorgonzola cheese crumbled (or Danish Blue Cheese) or Feta Cheese
  • 1 small Red onion thinly sliced (we also like pickled red onion)
  • 1 cup Grape tomatoes halved (optional, we don't use)
  • 3 slices Bacon cooked and crumbled (optional)

For the vinaigrette:

  • 4 tablespoons balsamic vinegar
  • 2 tablespoons red wine vinegar
  • 1 tablespoons Dijon mustard
  • 2 teaspoons light brown sugar
  • 2 garlic cloves minced
  • 2 teaspoons poppy seeds
  • 1/2 cup extra virgin olive oil
  • Salt & pepper to taste

Instructions

  • Assemble the salad ingredients.
    NOTE: You can add avocado for this. Interpret your salad ingredients to your liking.
  • In a small bowl, mix together the first 6 ingredients of the dressing. Slowly add the olive oil, while whisking vigorously to create an emulsion.
  • Season with salt and pepper to taste.

Notes

Feel free to adapt the salad greens/fruits to your liking. You could substitute freshly grapefruit slices with avocado-- or just avocado.  The dressing will make this salad pop with flavor!
