Linguini, Tomatoes and Basil are a perfect combination. Pasta is one of my favorite fast dinners to make, at home. This recipe is nothing short of a cooking miracle– just add pasta, and the rest of the ingredients to a large sauté pan…add water and cook for 9 minutes. You get fast and delicious pasta with a creamy sauce– without the cream! It’s a fun recipe to make and a nice change when you want a meatless meal that has a lot of flavor.
Like most people, who love to cook and bake, I have a serious addictionto cookbooks. I especially love cookbooks with full-color photos of each recipe.
I’ve done a fairly good job of controlling my impulsive buying of said cookbooks. But, once in a while, a clever placed internet ad will lure me to “click” and read what’s in it. That’s how I discovered this cookbook. Sigh.
Bring the water to a boil, cook the pasta (stirring frequently with tongs) until the pasta is al dente and the water has almost evaporated–about 9 minutes.

This is a novel idea that I'd like to try. I'd have thought it would taste starchy, but if it's "creamy" then I'm all in.

This seems too good to be true, Debby. But if you endorse a recipe I know it will be good. Every so often we have one of those days when I need to get dinner on the table quickly. I feel the same way about tomatoes and basil as you do…always a favorite.
