This Lentil Soup with Sausage and Kale is one of my favorite soups that I’ve made multiple times. I’ve adapted this recipe to making this in my Instant Pot Pressure cooker, but the stove works just fine. By using turkey Italian sausage, this soup is hearty and healthy. It freezes beautifully, too.
I love lentil soup, and I especially love it when it’s paired with sausage. So, I grabbed my soup “Holy Trinity” of one onion, carrots and celery and speed chopped them with my food processor. I have plenty of homemade chicken stock in the freezer and then I just started grabbing what I could find in my pantry. What I didn’t grab was my camera. I figured that there are plenty of lentil soup recipes on blogs and so I just started make a soup, my way. I also decided to make our favorite Buttered Rosemary Rolls because they are easy to make and don’t take a lot of time. At the last minute, I decided to use Parmesan Cheese, instead.
These smelled so good, that I decided to grab my camera after all, so I could share it with you.
I’m so glad that I adapted the Buttered Rosemary Rolls with Parmesan Cheese. They were wonderful! My son was happy, because he doesn’t care for Rosemary. By garnishing the lentil soup with a little Parmesan, my family had a hearty and comforting meal that was perfect for Fall weather.

Sausage, Kale & Lentil Soup
Ingredients
- 2 quarts chicken stock
- 1 can petite cut diced tomatoes
- 1 white onion chopped
- 2 carrots chopped
- 3 celery stalks chopped
- 1 clove fresh garlic minced
- 1 Tbsp dried thyme
- 4-5 Italian-style turkey sausage links casings removed
- 1/4 tsp red pepper flakes optional
- 1 small bunch kale chopped
- 2 Tbsp tomato paste
- kosher salt & pepper
- 1 ½ cups dried lentils red or green, rinsed and picked through
- optional Garnish of fresh Parmesan cheese
Instructions
- NOTE: I have adapted this recipe for the Instant Pot Multi-Cooker as well.In a large pot/Instant Pot inner pot, add about 1 Tbsp olive oil to medium high heat.
- Add a little olive oil to the pot. (For the Instant Pot, use the saute cycle to heat up the pot.) Cook the sausage, breaking into smaller pieces, until no longer pink. Add the red pepper flakes, unless you bought spicy Italian sausage. Remove the sausage and drain any excess fat.
- Add a little more olive oil, then the celery, onion and carrots and saute until tender (2-3 minute)
- Season with kosher salt & pepper, to taste.
- Add the garlic and cook for 30-60 seconds. Add tomato paste and cook for about a minute. Add the dried thyme.
- Return the cooked sausage to the pot and tomatoes. Stir to combine.
- Add the chicken stock and rinsed lentils . If cooking on the stove top, simmer for about 30- 45 minutes. If using an Instant Pot, lock the lid on, make sure the vent is closed and press SOUP button (30 minutes).
- Add the chopped kale and cook for 1-2 minutes (the kale will lose it’s bright green color after cooking for a while).
- Taste, and add more salt if desired. Garnish with Parmesan cheese, if desired.

After my personal Instant Pot lesson last weekend, I’m making this soup right now. I’ll add mushrooms and substitute the kale for spinach. The Pot is warming for Soup mode and succulent smells surround my kitchen. Can’t wait until it’s done.
