Grilled Hawaiian Burger with Pineapple and Slaw

For this Hawaiian Burger, I've used a combination of ground beef and pork, the patties are seasoned with allspice, ginger with green onions and cilantro. Slather on some Hawaiian barbecue sauce, and set on top of a grilled pineapple slice. For crunch a layer of mayonnaise-free Hawaii slaw on top, and you have extra crunch and flavor-- reminiscent of the Hawaiian islands!

Ingredients

  • 8 hamburger buns
  • 8 pineapple rings we used fresh, but canned is okay

FOR THE BURGERS:

  • 1 pound ground beef
  • 1 pound ground pork
  • 1/4 teaspoon allspice
  • 1 tablespoon ground ginger
  • Salt & pepper about 1/2 teaspoon each or to taste
  • 1 cup fresh cilantro chopped
  • 1/2 cup green onions sliced
  • 1 cup barbecue sauce We used Target/Archer Farms Sweet Pineapple Hawaiian-Style sauce

COLESLAW:

  • 3 cups green cabbage thinly sliced
  • 1 cups purple cabbage thinly sliced NOTE: bagged pre-shredded cole slaw mix is fine
  • 1 cups carrots shredded
  • 1/2 cup pineapple diced; optional
  • 1 clove garlic finely minced
  • 1 tablespoon poppy seeds
  • 1/4 cup rice vinegar or apple cider vinegar
  • 2 teaspoons honey mustard or Dijon will work
  • 1/2 cup olive oil add more, as needed
  • Salt & pepper to taste

Instructions

Prepare the burgers:

  • To the ground beef and pork, add the spices, green onion and cilantro. Gently mix together.
  • Form into eight patties, and push an indentation into the center of each burger. (This prevents the patties from "buckling" while cooking.

For the Cole Slaw:

  • In a bowl, whisk the vinegar and mustard until combined.
  • Slowly whisk the olive oil.
  • Add the poppy seed and garlic.
  • Season with salt & pepper, to taste.
  • Add to the sliced vegetables and combine.
  • Cover with plastic wrap and refrigerate for at least 30 minutes.

GRILL THE BURGERS:

  • Grill the burgers to your liking (we aim for 145° for medium). Slather on barbecue sauce once the burger has been flipped over.
  • Lightly brush each pineapple ring with vegetable oil, and grill on each side for 2-3 minutes. Set aside.
  • Grill the buns. Add a grilled burger, pineapple slice and top with cole slaw. Enjoy!
