This simple fresh fruit salad showcases summer fruits at its peak in freshness. The lemon poppy seed dressing really brings out the bright and sweet flavors of the fruit. It’s so simple, yet so good!
Living in California, we are pretty fortunate to find locally grown fruit almost year-round. I always look forward to seeing locally sourced summer fruits, like peaches, apricots. Strawberries remain at the top of my list. I’m sorry to say that watermelon is a fruit that I’ve never bonded with. Whenever I am served a fruit salad with watermelon (or honeydew), I pick it out. All I can taste is the “ghost” of watermelon and it overpowers the taste of the fruit salad for me.
When I first made this fruit salad, I couldn’t stop eating it– and I didn’t feel guilty about it. It has all of my favorite fruit– fresh strawberries, pineapple, and kiwi. There was one of my favorite fruits missing, from this recipe– banana. Strawberries and Kiwi are a great pairing. So is Strawberries and Banana. The lemon poppy seed dressing is so fast and easy. All you need is freshly squeezed lemon juice, sugar (or honey) and poppy seeds. Voila!
Right before serving the fruit salad, I added sliced bananas. I wouldn’t add the bananas far ahead of time, as they can break down and become mushy.
TASTING NOTES: This fruit salad tastes so fresh and clean! While I love Creamy Ambrosia Fruit Salad, this Summer Salad really showcases the fruit with the bright, and slightly sweet, lemon poppy seed dressing. Calorie wise, it’s also friendly to the waist line. This is a perfect salad to serve at any barbecue potluck. I’d pack the dressing separate, and toss the fruit salad right before serving. Your guests will love it!
Ridiculously Easy Summer Fresh Fruit Salad with a Lemon Poppy Seed Dressing
Ingredients
- 1 large pineapple cut into bite-size chunks
- 2 pounds strawberries rinsed, hulled and cut into quarters or bite size pieces
- 4 large kiwis slice the kiwi in half, and use a spoon to remove the fruit from the peel. Cut into bite-sized cubes,
- 1 large lemon juiced
- 2 tablespoons sugar or honey
- 1 tablespoon poppy seeds
- 1 banana sliced (optional); my favorite
Instructions
- Combine all the prepared fruit in a large mixing bowl. Drizzle lemon juice over fruit. Sprinkle the sugar and poppy seeds over and then stir gently to combine.Serve within a few hours. This fruit salad does not keep well overnight, as the strawberries become mushy.NOTE: Add the sliced bananas right before serving, so they don't turn brown or become mushy.
