These cookies put the “fun” in funfetti. They’re at Funfetti Cake in cookie form, with just the right crispy exterior and chewy interior. The colored sprinkles are so festive, and would make any child (or adult) happy to receive them. I baked some large cookies, and turned them into ice cream sandwiches. Bake them smaller, and they will disappear in no time at all.
When my son was a little boy, I remember baking Funfetti Cupcakes for his classroom, because that was the cake mix he always chose. (That was, back in the day, when I used to buy cake mixes.)
My favorite cake is white cake, as is my son’s. I’ve also learned how to make a funfetti type of Sprinkle Cake, from scratch. It’s a bit of work, but it’s a show stopper!
The colored sprinkles are festive, and I think that most kids love Funfetti anything for that very reason.
If I had to pick my favorite cookie, it would be sugar cookies. When I read that this cookie recipe uses both vanilla and almond extract– and I happened to have a collection of colored sprinkles on hand, I decided to make them for me surprise my boys with cookies for their lunches.
These were super easy to make– in fact, the batter was ready in less than 10 minutes.
Despite all the warnings about eating raw cookie dough, and raw eggs– I have survived my addiction fondness of cookie dough. This cookie dough rocks! OMG! The dough tastes just like Funfetti cake batter!

Funfetti Cookies
Ingredients
- 1 cup Butter 2 sticks, room temperature
- 1-1/4 cup Sugar
- 2 teaspoons Vanilla Extract
- 1 teaspoon Almond Extract
- 1 whole Egg
- 2-1/2 cups Flour
- 1/4 cup Cornstarch
- 3/4 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 1/2 cups Rainbow Jimmie Sprinkles
- 2 Tablespoons Nonpareil Sprinkles
Instructions
- Preheat the oven to 375ºF.
- Cream the butter and sugar in your stand mixer (or hand mixer) for about 2 minutes, until fluffy. Add the vanilla, almond, and egg. Beat until well combined.
- In a separate bowl, sift in the flour, cornstarch, soda, and salt.
- Slowly add the flour mixture to the butter mixture, and continue on low speed until it’s all added and combined.
- Mix in the sprinkles (don’t over mix or the sprinkles will start to bleed into the dough).
- Using an ice cream scoop, scoop cookie dough onto cookie sheets, about 1 1/2 inches apart (fits 8 cookies per sheet). Bake for about 15 minutes.
- (Note: Only bake until they very slightly start to turn light golden brown just on the edges. You don’t want them to totally turn golden or they’ll be crisp cookies. Check them around 10 minutes, then 12, and so on.)
- Cool on a wire rack. Store in an airtight container up to 4 days.
